Weekends where do you go? It’s a mystery to me. We start out on a Friday with all the time in the world and by Sunday night I can only think…where did the weekend go? Today begins week 4 of whole 30 just 7 days left!
Here is what last week in food land looked like:
The grill is out and I have been using it as much as possible. I enjoyed steak, shrimp, hamburgers (no pics) and lots of asparagus and baby cabbages! (Baby cabbages sounds cuter than brussel sprouts right?) Summer weather is here and I like to eat like the season. Am I the only one who does this? Winter = comfort food ; Summer = light ?
If an apple a day keeps the doctor away, I tried proving it this week. I bought 6 apples and by Saturday they were gone. I had almost forgot the delicious joy of biting into a red delicious apple. I’m so used to cutting them up for my boys that I had started eating them that way too. For some reason I dug into one with a bite and then I was eating them as a lunch “dessert”…even typing this I’m now craving one. Yumm natures goodness!
This week I could see the change in the taste of food. I bought a huge bowl of cut up fruit that usually I would find “unsweet” and only eat certain fruits out of. Now I’m digging them all. The book told me foods with natural sugar would begin to taste sweet again. And I’m finding that to be true. Blackberries and Cantaloupe are some other favorites I’m rediscovering this week.
Workouts this week have been good. I’m back into running and although I only ran 7 miles, it’s more than last week. I completed 3 one hour P90X classes along with 2 weight workouts and Yoga class this morning.
I may be the least coordinated person on the planet but I am beginning to find my inner yogi. And now that I know there is a 8am yoga class right in town I’m excited to get back into a regular class and schedule.
The best most unexpected culinary delight this week was this Tomato Balsamic Pot Roast:
I added in carrots and sweet potatoes since I’m searching for ways to get more carbs into my diet. I think, I have the balance (proteins/fats/carbs) slightly off is which is why I still haven’t achieved the high levels of energy others and the book had promised. I’m trying to squeeze them in everywhere.

Again please note my serious face. I should mention I tried to make this weeks update photo NOT a selfie but my husband kind of blew it with his photos. I’m talking in 3 of them, one is of my eye and another just of my shoulder. Mission not complete, do not pass go. I love ya Troy but I’ve turned into a regular Ansel Adams with these selfies. Yeahhhhh no….but there is no way photos like this are going to help me document progress, they are kinda funny though!
I feel like now with digital cameras we so rarely keep our blooper shots. Sometimes I think they are really the true types of pictures. We aren’t perfectly set up for the camera instead we are just ourselves.
Only 7 more days to go it’s time to buckle down and finish strong!
