HAPPY WEEKEND Readers!
It was a crazy busy week in case you missed it find it here. And of course anytime things start getting crazy, and the weather is being bi-polar it’s inevitable get a little ill. Such is the case this weekend. Luckily it was a dismal day outside so I didn’t feel bad for being crazy lazy and resting. Secretly I think it’s my body way of telling me to get some sleep. Sleep you say…Yes I’ll take that!
Friday night we took my son to a Hockey Game and watched the Syracuse Crunch in some playoff action! A great time was had by all except for maybe the Crunch they lost 3-2. I was amused all game long by sitting next to the sweetest mullet I have ever seen. This kid’s mullet could rival that of Joe Dirt. I have pictures but to protect the innocent I won’t be posting them. You can get the picture:
After bumming around all day I decided to make a healthy dinner.
Quinoa with Roasted Veggies:
I threw in some left over turkey sausage as well. It’s a modge-podge dish but it was delicious!
Make one cup of Quinoa (follow directions on bag) set aside
Chop up veggies of your choice.
I used red onion, zucchini, grape tomatoes, Brussel sprouts and yellow squash. ( I might skip the Brussel Sprouts next time)
Mix veggies up in ziplock bag (or a big bowl) with 2 tablespoons olive oil, 3 garlic cloves crushed and salt and pepper to taste. Mix till all is coated.
Place on a baking sheet, being sure to spread it out flat as much as you can.
Bake for 20 minutes at 350°
Remove from oven and mix into Quinoa. I added turkey sausage. You can also add some canned tomatoes if you want more of a sauce.
This was one of my first times cooking with Quinoa and I really like it. It cooks much like Rice. Now I’m on the hunt for more recipes to try…. Pinterest look out!
Workout: Unless channel surfing counts I’m in trouble today! I’ll be doing some stretches (these) today. We watched Caddyshack so I guess if laughing can count as an ab routine I did that too! 😉
