I’m still alive! Not that I there was a question I would be, but it’s been a tough week. I discovered the joy that is ghee and also rocked a few new recipes. I even got desperate enough to try coconut water. Ewwww not a fan.
I’m getting my energy back as I enter week 3 but I’m struggling with recipes and food. Here is a glimpse of what last week looked like:
I finally found a store with Spaghetti Squash and I stocked up! Lunches this week were often the tuna/chicken salad with apples, strawberries, avocado and onions. Weird combinations yet they tasted delicious! And stuck with me. I’m having a really hard time with just 3 meals a day staying full. I think I’m going to need to up my water intake to combat that. I’ve also been enjoying an approved lara bar here and there.
The best thing I made this week:
Pure no sugar Bacon with Brussels (baby cabbages!) and Sweet Potatoes:
I don’t really have a recipe for this, I made bacon sat it aside. Then I halved up a ton of brussel sprouts, diced up one sweet potato, added 2 cloves garlic, a little chopped onion, salt, pepper and cooked them in ghee until soft then added the bacon back it.
It was so good I ate it the next night too!
Saturday was my first “BAD” day. I had a beer after my race out of sheer hydration needs. And at a BBQ after I struggled to find food options that fit my meal plan. I was warned to pre-plan outings and activities but it was so hard to do. And after a day of racing I was starved! I only drank water, so at least I didn’t cave on both food and drinks at the BBQ. But HOLY headache the next day…
I’m determined this week to keep in together and finish strong. I can’t believe the difference two weeks can make. Even my husband has commented on how much thinner I’m looking! Score! My belly is a little less flabby than when I started. You can compare it to this image.
Today kicks off week 3 of whole 30! Just 15 days left…gotta make them count!
Hopefully with my energy coming back I can keep my workouts constant. I’m still on the fence about this weekends Mountain Goat 10 miler but we will see as it gets closer how I’m feeling.
The boys new favorite question… “Mommy can you eat that?!” My oldest was heart broken as a family we went for ice cream and I couldn’t have any. It’s funny what kids pick up on, he thought I was being punished.
