Sunday’s are sometimes my most accomplished days and some weeks they are the ultimate in lazy.
This Sunday I rocked out the day. And it didn’t start promising. I woke up before my alarm at 6:10 and considered reserving a bike for a morning spin session but when that was unsuccessful. I considered heading back to bed. Instead I heard my paper lady and decided to catch up on crap TV while reading sales fliers with a cup of joe. This was a good choice! My kids woke up shortly after and we all enjoyed a relaxed morning. That’s code for NO HOCKEY at 8am
We had a family breakfast, went grocery shopping, I got my longish run in while my husband took our youngest to the pool for some fun. And my oldest had some grandma time. I always feel like tackling projects after workouts so today I meal prepped our entire week of dinners and my lunches!
Dinners included –
- Lightened Chicken Pot Pie
- A trail run of zucchini casserole (I hope this is good!)
- Parmesan tilapia
- Spaghetti squash
- Salad toppers
I also whipped up some other odds and ends that are nice to have on hand for breakfast: Easy Banana Muffins. Hard boiled eggs make great snacks and tops for salads. I also cut up celery, green peppers and carrots for week snacking and roasted some grilled zucchini & onions. It wasn’t my most ambitious attempt at food planning but this will help keep the family on track. The kids are home from school this week so I’m sure things will get crazy fast.
I’m most excited to try out this Tilapia. I love fish but have always struggled with preparing it. I bought frozen fillets that were on sale this week thawed them out and added the crust. I’ll share with you my recipe later this week!
My run today called for 8 miles. I completed 5 and called it a day. Tomorrow I am tackling what I would consider (before even trying it) the most difficult class thus far in the #cuseFIT2013 series. I’m nervous but I think I’ll be ok and I can’t wait to share the details with you guys. I’ve actually got a few classes lined up this week for the series! I’m still working my way through the #nogirlypushup challenge! Yesterday was Week 2 day 1 and I completed 24 push ups. Now please realize these are not full on beautiful push ups yet. I’ve got some serious work to do in this area of fitness. But I’m sticking with it and so far have completed 74 push ups!!
I lifted twice this week with my husband….Yippeee! And I still managed to get in 14 training miles running. I’m calling it a successful week! No yoga this week but I definitely need to fit some in next week. I can’t get over how much more limber I feel when just doing an hour a week.
Now it’s time to settle in for my favorite show, The Walking Dead and get ready for the week!
