Today I took full advantage today of the last sweet hours of the long weekend….
A relaxing day pool side was in order! So we headed to my sister in-laws for some fabulous food and fun!
I’ve been in desperate need of some new side dishes as BBQ season kicks off. I can only eat so much mac salad and potato salad. Plus on a hot summer day neither of those options ever seem that appealing to me. All that mayo on a hot day…eh not so much!
Behold: Orzo spinach Salad! I have been on a killer spinach kick lately, I think I’m addicted to the Iron, so this was right up my ally! And it is DELICIOUS!
1 16 oz package of uncooked Orzo
1 10 ounce bag of baby spinach chop finally
6 ounces crumbled feta cheese
1/2 cup red onion
3/4 cups pine nuts
1/2 teaspoon chopped fresh basil
1/2 cup olive oil
1/2 cup balsamic vinegar
Make orzo boil 8-10 minutes, drain pasta and place in big bowl toss in all ingredients mix well and refrigerate overnight serve cold.
Modifications: I’m thinking this salad would be a great dinner with chicken added to it. I added some rolled up deli turkey for lunch tomorrow! Yummmm
As for a my workout other than hoisting a 25 pound in and out of a pool for hours on end I took in a slow run this morning but it was enjoyable other than the brief sprinkle of rain. fitness #proof
Now I’m off to watch the Hatfield & McCoy mini-series on the History Channel. I’ve been waiting for this for weeks…..
