While I was in LA for Blogfest I met a lovely blogger named Kelsey from little bits of… blog. She and I sat next to each other at dinner and discussed our mutual love of Whole30 and she mentioned a wildly popular post she had published about Sweet Potato Toast.
At the time I was sort of off my whole30 track and was interested in the idea but wasn’t like ooohhh yeah I should make that. Well 18 days into my most recent round of #whole30 and seeing Kelsey on the #whole30 recipe page reminded me of the conversation we had in July.
Dayyyyyyymmmm Kelsey you’re a genius and sweet potato toast might the only thing holding together my latest whole30 challenge.
I would be a jerk if I didn’t share this with you guys. This recipe is perfect for those of us who are eating #whole30 but also a great option for people looking to pack a little more healthy carbs into their diets.
While Kelsey offers you many options for deliciousness in her post. I opted to create the version that most appealed to my sugar deprived brain…bananas, almond butter, and cinnamon.
But no really you toast the sweet potato:
If you are interested in joining the cool kids in eating this recipe, I’m suggesting that in a regular toaster you toast through 3 cycles, for a golden toasted sweet potato and other than that slight variation (my toaster might just be old?) I followed completely Kelsey’s recipe to the T. And it’s the MOST perfect addition ever to whole30.
So what else have I been eating this round of #whole30? It’s been pretty non-exciting, I promise. I’ve kept it simple, and there have been a few cheat meals from non planning and events that just didn’t lend themselves to sticking to the plan.
Roasted veggies are a dinner time staple, they are simple to put together and can be cooked on the grill.
Hard-boiled eggs…oh man the amount of hard-boiled eggs, I need to invest in chickens:
I think I have a different salad for everyday of the week. Steak, chicken, summer you name it and this month I have eaten it according to whole30. There is so much fresh produce in our area right now that there is NO excuse for not enjoying some delicious combination every day this month.
And grilled chicken with chimichurri sauce has been a lunch time favorite. It packs well and is easily added to a veggie side.
Overall this round I’ve kind of felt pretty blah, my body didn’t have the same SNAP reaction it has had in previous rounds…I’m not up at 4:45am busting with energy, which was really the whole reason I wanted to complete this round. I think it’s the heat and the amount of busy we’ve been this month (or it could be watching the Olympics until 11pm and after everynight?), but I’m hoping this final week I can get it all together and hit those marks for success with this round!
