It is cherry season! My farmers market is full of them and I have been enjoying every sweet bite. When I was craving something sweet yesterday I instantly wanted some cherries in the mix. Mind you I’m not the world’s greatest baker, but luckily for me they make boxes of cake mix….have you seen them in the store 😉
I had picked up a few boxes of plain white box cakes for just an occassion. you know the days you feel like getting fancy, but you don’t want to measure out bag and bags of flour. So here is my super easy quick Cherry Vanilla Cupcakes, with buttercream frosting.
- One box white cake (oil, egg whites, water)
- A jar of maraschino Cherries
- Vanilla extract
Make the white cake as instructed on box, mince 6-7 cherries, add the minced cherries and 3-4 table spoons of the cherry juice to the cake mix. Add one teaspoon vanilla extract. Fold into mix and pour into cupcake liners. Cook as directed on the box.
Butter Cream Frosting:
- 2 Sticks of softened butter
- 3-4 cups of confectioners sugar
- 2 tablespoons of maraschino cherry juice from jar
- 1 teaspoon vanilla extract
- 2-3 tablespoons of heavy cream
Mix butter and sugar together in a bowl, be sure the butter is completely mixed in the sugar. Add in the milk and vanilla. Once completely mixed remove a half a cup and set aside for the white frosting. With remaining frosting add the cherry juice and mix. It will be a light pink color. And frost cupcakes accordingly. The white frosting you set aside is the goes on top of the pink frosting. If you like top each cupcake with one maraschino cherry. ( TIP: it’s best to dab the excess juice from the cherries so they don’t leak down the frosting!)
