Summer calls for salads! And I’m a sucker for a versatile salad that is both pretty to present and tastes great.
With fresh green and red peppers, grape tomatoes and mozzarella cheese, this can count as a perfect side salad or an entire meal.
Perfect Antipasto Salad:
1 – box of pasta cooked
1 – diced green pepper
1 – diced red pepper
1 cup – pepperoni sliced in half
1/2 cup – cup grape tomatoes halved
2/3 cup – Italian dressing
1/2 pound of cubed mozzarella cheese
handful of pepperoncinis
- Cook pasta, drain and rinse in cold water, place in bowl
- Add ALL other ingredients to the pasta, mix completely and chill
- Serve cold.
It’s a fan and family favorite. I personally like to add LOTS of pepperoncini for a little extra kick! This recipe makes a ton and is great for pot lucks and BBQ’s.
This weekend we made this salad for a neighborhood BBQ and a family birthday party!
The boys had a great time in the egg catch game!
And after a long week apart it was great to get to see my husband again, oh and have a beer!
