Summer is upon us and like most parents I struggle to keep up with my kids endless appetites. I want them to make healthy choices but some times the fastest thing to eat isn’t the best choice. So this summer as my boys get older, I’m trying to find healthier and more filling snacks to keep them full, engaged, and focused. This summer I’m once again teaming up with Produce for Kids and Price Chopper to support Feeding America.
In our new neighborhood my boys can actually be off on their bikes having an adventure for hours a day. I love it! It was one of things that drew us to the neighborhood was I could give my boys a small taste of freedom and the ability to have a “1980’s” style summer. You know the kind where they get to play without the endless eye of parents, get to solve their own problems, and make their own plans? I’m so excited for them…it should be a great summer of growth for them.
Because my boys will literally eat everything in the house in one setting I made it my goal this summer to find for them snack that not only make me feel good as a parent giving them but also stick with them. Fresh fruits and vegetables are a huge hit. They are sweet and colorful who doesn’t love something bright on their dish?

But my new secret weapon this summer is the avocado:
With a nutty, buttery flavor that is filled with healthy fats, I’m finding new ways to pack avocados into our meals and snacks.
This nutty berry toast is perfect for breakfast, light lunch or an anytime snack. It’s quick to make and all you need is a toaster so pull it off. (no turning on the stove!)
This is the world’s easiest recipe: toast a piece of multi-grain bread, and top with half a mashed avocado and some strawberry slices. My boys said it tastes like peanut butter and jelly…score! If you really want to get crazy top it with a poached egg (now you will need to turn the stove on for that!)
This is a meal that even I enjoy on a hot day, it’s light and crisp. And thanks to the nutty fats from the avocado it is filling.
There are a million delicious ways to enjoy more avocados this summer for kids and adults alike:
