Ok so I’m months…maybe years late to this party but holy cow… instant pot, I think I love you. While my street cred is obviously a little delayed there is no doubt in my mind that this invention is going to change my life and my dinners too.
On Amazon prime day my husband was having a full-fledged man shopping spree and just kept adding things to our cart all day long. We share an account so as the notifications kept rolling it I was expecting to see a million purchases of crap we have no use for = cheap smart watches, random books no one will read, fidgets, and my personal favorite cases of water. BUT no Troy knocked it out of the park this year… he purchased a Roomba, a basketball, and an Instant Pot, along with about 10 other items that still haven’t arrived. (come on Amazon!) With my ear somewhat in the healthy-living blog community I have heard many people talk about how dope these babies are and how it changed their lives… but to have my husband purchase one was something completely different. Typically I talk about some new health/fitness thing I want and he laughs…but this purchase was all on him! The guys at work told him how awesome it would be and BAM purchased.
I was pretty nervous to use it for the first time… pressure cooker and a klutz you can kind of see it’s a recipe for disaster but after reading what seemed like 500,000 pinterest posts on tips for first time insta-pot users and typing the word pot into just enough Google searches to keep the FBI away I decided I was up for the challenge.
First meal…mac n’ cheese!
Now I have to admit this was a pretty easy recipe but I was scared to death of the pressure cooker, I can remember the stories of people being burned with them from my youth and I’m sort of chicken about those things. But after taking precautions and reading every step carefully and deliberately I discovered the pot is pretty genius.
I made this mac n’ cheese in 10 Minutes….10 MINUTES!
I used this recipe and literally it blew my mind how quickly it cooked and how well it tasted. On a school night in the fall or after hockey practice this baby is going to make cooking for the family less of a chore!
I can’t say enough great things about this instant pot! It cleans easily and food is cooked in magically quick time. My next project is going to be a one pot healthy meal. While 1 pound of pasta and cheese tasted delicious it isn’t doing my waistline any favors.
So if you’ve been on the fence about one of these pots or like me knew little of their amazing powers… they are totally worth the price! We picked up our 8 gallon for $89 on Prime Day. And I’ve seen them on sale at Kohl’s as well. Now I just want to cook all the things in it.
