In case you hadn’t heard Panera killed of my most favorite avocado cobb salad… I’ll give you a moment to shed a tear for my long-lost pal. I love Panera. It’s my favorite place to grab a bite and chill so when I heard my salad fell off the butcher block, I was heartbroken. I decided to be a good friend to Panera and play along with their new Green Goddess Salad. It’s not a perfect replacement to my old favorite but I’ve fallen in love with the green Goddess Dressing.
From first taste I could tell it was creamy, and the typical recipe calls for Mayo, and sour cream. Clearly both of those are OUT for #whole30 so I set to create my own version of this green beauy for my home that is whole30 approved.
Apparently this green goddess salad dressing was all the rage in the 1970’s and is making it’s come back today! Although in a healthier version.
Green Goddess Dressing:
- 1 cup avocado mayo
- 1/2 of a fresh avocado
- 1 hand full cilantro
- 2 cloves of garlic
- Juice from half of a fresh lemon
- pinch of targon
- Mix all ingredients into a food processor and blend until smooth.
- Serve on a fresh salad
I’ve taken out all the dairy and may that usually makes this dressing heavy. This lighter version is perfect for those completing #whole30 or looking for a healthier option this summer. Yumm give me some greens and this dressing just makes a salad for me. I’m a food phase person, I get addicted to something and will eat it everyday until I can’t stand it anymore. It’s a bad trait I know but sometimes I can’t help it.
Thanks Panera for the inspiration. Although I’m still sad my favorite cobb salad is gone. It’s the worst when you have a favorite dish and it’s suddenly gone from the menu.
I’m getting all sort of nervous and hyped up to try a new to me gym today! Bring on the new challenges and fun, I feel like now that summer is winding down I’m starting to plan out fall goals for myself? Anyone else? I might even get in a 5k this fall…say what?! I know I’ve totally fallen off the running wagon I think it’s time to jump back on.
