Sometimes the challenge of meatless Monday, with my family involved becomes a challenge all on its own. Creating great dishes that secretly fool my family into the enjoying a delicious meat free meal before they know it’s meatless…that’s the hard part. Gardein this week made me a HERO!

We have been on a big Mexican kick lately. Tacos, enchiladas, burritos you name it Mexican we have eaten it in the past two weeks. I like creating Mexican dishes because I feel like there are always easily warmed up and enjoyed again as left overs. And who doesn’t like coming home after a long day to something simple?
BUT the problem is we are in a rut. I needed a way to shake up our Mexican meals. I know the kids will eat them so I can’t eliminate them, I just needed a way to “spice” it up.
Fiesta CUPS it is! And the best part is…not ONE person in my house knew they were meatless. I would say that was the BIGGEST success of these easy to make cups.
And by skipping meat for one day, I’m helping the environment! It takes 1,799 gallons of water to produce just 1 pound of beef. That’s the amount needed for 60 showers! Conversely, it only takes 52.8 gallons to produce 1 pound of Gardein. (source: Water Foot Print Research Methodology for beef usage) The more you know 😉
- 2 cups of Black Bean & Corn Salsa (my recipe is here)
- 2 cups of Gardein Ultimate Beefless Ground
- 1/4 cup shredded cheese
- 1/2 an Avocado mashed
- 1/2 cup Ranch Dressing
- Fillo Dough Cups
- In a large bowl combine the corn salsa, cheese and Gardein Beefless Ground.
- Remove Fillo Cups from packaging and on a flat pan.
- Begin filling each cup with the Gardein and Salsa mixture.
- In an oven heated to 350 degrees cook the cups for 10 minutes.
- While the cups are baking, combine the ranch dressing and avocado mash to create a sauce for each cup.
- Remove the Cups from the oven and top each with a dollop of the ranch avocado dressing.
