Whomp there it is….You’re welcome that song will now be stuck in your head for the rest of the day! Today is day 2 of my second round of whole30, hence the WHOMP! I’m averaging a strict month, once every 6 months at this point. So you ask what is Whole30? You can read more about it here.
My first time through the program I had NO idea what to expect or even a good idea of whether I could complete it or not. I made it and did pretty well with it. This time I’m really trying to branch out and try new foods. I’m feeling the withdrawal of sugar a little fast this time. And on day 2 I’m already having hot flashes of my body screaming out for some sugar.
Yesterday was a quiet day since it was a holiday so I took full advantage of the time and prepped up most of my meals for the week. Including some meatballs that were a dinner hit last night even with the kids. I love cilantro it’s one of my favorite flavors, so these were right up my ally! I wasn’t sure they would stick together since obviously bread crumbs are a HUGE NO in whole 30 but these did stay together quite well.
- 1 pound ground beef
- 2 tablespoons fresh cilantro finely chopped
- 2 green onions, finely chopped
- 2 teaspoons root ginger, peeled and minced
- 2 cloves garlic, minced
- 2 tablespoons ghee
- Mix all the above together. Season well.
- Scoop out a handful and shape into a ball. Repeat until mixture is used up. Chill the meatballs in the fridge for 15 minutes to set. (The chilling is important do not skip this step!)
- Heat the ghee in a hot pan. Add the meatballs and sear on all sides until brown. Remove from pan.
- Pre-heat oven to 375. Bake meatballs for 15 minutes.
I grated my garlic, ginger and onions, I feel like I get more flavor from them that way. I’m not sure if that is even possible or true? I think it’s all in my head, but I’m sticking with it.
Since my family does not participate in my Whole 30 adventures they had these meatballs with spaghetti and tomato sauce. I enjoyed mine with green beans and baby cabbages I had made earlier in the day as part of my meal prep. I snapped a photo of a few things I created. Honestly I was too lazy to pull out everything again for a photo of my meal prep.
This weeks menu includes the above mentioned meatballs, green beans, salads, hard-boiled eggs, sliced peppers, apples, cilantro lime chicken, apple chicken salad, obviously mayo and some baby cabbages AKA brussel sprouts. I also cooked all my bacon and ground beef for the week. I thought about roasting my spaghetti squash but I’ve found I prefer to eat that freshly cooked rather than reheated. I also mashed some sweet potatoes with cinnamon.
Here’s to the first week of whole30 Part II being a smashing success.
This is a bit of insane week for both family, workouts and work so I’m hoping to keep it together Fingers and toes crossed. We also have our weight ins and measurement this week at P90X…I’m not feeling as strong as I did the first time, although I have lost some weight I’m feeling really flabby like maybe what I lost was muscle…boo. I’m sure getting my eating habits back on the clean side with help offset some of my feelings of blah. Or at least I hope?
