As my reward as a single parent this week. I made myself a most fabulous Friday night dinner! Healthy? No I don’t think so. Delicious? Why Yes!
Cook the chicken completely. Layer the chicken, sliced tomato and cheese on top of a slice of Italian bread. To the bread I first added a touch of Olive Oil and garlic salt, gives it a little extra hint of flavor.
Heat oven to 350° bake on a flat baking sheet for 8-10 minutes.
Remove from oven top with basil leaves and put back in the over for 2 minutes, or until cheese is completely melted.
You can serve these as a sandwich with another piece of Italian bread on top or open-faced.
My secret ingredient for cooking Chicken Chipotle Chile Pepper! It’s so yummy and adds a little heat to the chicken. I stole this bottle from my brother, which he left at my mom’s house! So you could say it’s a family recipe haha 😉
