This month marks the great migration of children back into the classroom! Prior to this year I didn’t understand what the big deal was. This year the amount of extra mommy work has hit me like a ton of bricks. 1st grade and starting a new preschool, is a whole new adventure! Each night there is a new activity to try out, open house, homework and paperwork for mommy to fill out. Leaving little time for a family dinner.
My son gets off the bus around 4pm and has to be on the ice by 5pm! (yes if you are doing the math I have approximately 30 minutes of time to feed him, ask about his day and change his clothes, not including driving to the rink!) Of course he is starving by the time he gets off the bus, so feeding him quickly is priority. Add to the mix the fact my husband also gets home right around this time and it quickly turns into a family circus of activity at dinner time.
Since discovering the tight schedule I have been on the hunt for some quick and filling dinner options for my family.
I was excited to try out Pillsbury Grands! Biscuits family meals, who doesn’t need more dinner options? Pillsbury’s meal options are family friendly and fun. Keeping my dinner offerings fresh and appealing to my big guy and little ones alike. The Pillsbury Grands! Mini Chicken Pot Pie puffs caught my eye right away.
My husband goes ga-ga for pot pies but like all great recipes it can get boring when nothing is changed up. plus after creating them once I can see where these are an excellent candidate for freeze and reheat meal options. As a busy mom and a regular meal planner. Finding new dishes to make ahead always scores a recipe extra bonus points in my book! 😉
With just four ingredients these pot pie puffs were not only easy to create but are a favorite with my kids! Who doesn’t love some hearty comfort food? They are quite cute too, which always helps with plate appeal
I found a few short cuts in this Pot Pie Puffs recipe it calls for 45 minutes but since I tend to be a meal prepper on Sunday’s I had my chicken already cooked and cut ready to mix in with the veggies and cream of chicken. I would say planning it ahead of time cut out 15 minutes. I adhered to the recipe, but added in some chopped celery and onion to add some additional flavors to the puff.
