Yummm first let’s talk lunch. I’m doing whole30 for those who may not know. Basically I’m removing sugar from my diet and retraining my body to know what real food tastes like. I’m not eating dairy, wheat, flour, pasta and many other things including sweet wine! Last week I kept it simple but this week I am determined to eat meals that are flavorful and delicious.
I had my standard breakfast of eggs but was looking forward to this lunch all morning! It was amazing! And I think something I would continue to eat even after this 30 days is over.
Apple Avocado Chicken Salad:
1-Apple cut into small pieces
1-Chicken breast diced
1- Sweet Pepper
1/2- An avocado diced
1/4- Cup Whole 30 mayonnaise
1/4- onion chopped
1. Mash the avocado into a bowl. Add chicken, onion and apples mix lightly.
2. Season with the salt, pepper and dill to taste, as you mix.
3. Cup the top off your sweet pepper, remove seeds.
4. Stuff chicken salad in sweet pepper and enjoy!
Creamy and delicious, this came out perfectly. I’ve been inspired all over the place and normally would NOT mix apple and avocado with dill but it was amazing!
Yesterday was an unexpected twoaday run day. I went to the gym and completed a quick 5k in the am, then took the boys out for an evening run last night of 2 miles. My little guys are NOT getting any smaller and pushing them now is more of a grand chore than it used to be. They get in the jogger, they get out, they want to run, they want to walk. My oldest is actually pretty fast!
It was the perfect night for a run, no matter how complicated.
The workout today was a HIIT that has left my arms extremely sore. I have zero upper body strength its pitiful. I’m working on it. I guess it can only get better? 😉
