This day is one on the run! It’s just 2PM and I’ve already gotten in a few great hours of work, weeded and watered my garden, ran a few miles, taken my son ice skating, finished lunch and naps. I may have even snuck in a few loads of laundry in this mix! CRAZY!
One thing that makes this all possible are super easy and healthy breakfast and lunches.Who has the time to create 4 star food choices in this busy world? But fast doesn’t need to equal unhealthy. Case in point:
My friend Brigitte used to eat these religiously for breakfast. I always thought they looked yummy but I was much happier with my insta-cup of oatmeal. BOY was I wrong!
Simple to make and the perfect mix of protein and sweet, I can’t get enough.
What you need:
– One Whole Wheat English Muffin Toasted
– Cottage Cheese
– 2 tablespoons of jelly
For a family on the run these are fast and filling…the perfect fast food!
