Want a great breakfast that’s not only super quick and easy to make but also good for you?
Look no further than OverNight Oats! The best part about this breakfast is all the prep is the night before so it’s an easy grab and go on your way out the door! As a mom to two this is super helpful since opening the fridge is about all the energy I have left in the morning after getting my two ready for their days!
Over Night Oats:
What you’ll Need:
→ 1/2 Cup 2% Milk
→ 3/4 of a Cup Old Fashion Oats
→ 1 Cup of Delicious Greek Yogurt (My go to is Chobani, local food is BEST!)
→ 2 Table Spoons Whole Chia Seed
Mix all the ingredients together in a dish. I use a Ziplock container with a lid because you never know in my household what will survive a night in my fridge and still be there in the morning.
Mix and place in the fridge overnight (ahhhh now you understand the name)
Mixed it will look like this not really appealing but give it some time:
In the morning take it out stir it and add fresh fruit or some almond butter then Enjoy!
*I originally came across these delicious slices of heaven on the blog pbfingers.com
I love overnight oats although I realize they aren’t for everyone. It’s a thick delicious mix up of food I already enjoy. It keeps the mid-morning hunger away even after a great morning workout.
Plus I love Chobani and am always looking for new ways to add it to my food. It’s a great source of Iron and Protein!
If you’ve never tried Chia Seeds before they take little getting used to. At first they are a bit awkward to eat. Starting out I would suggest RunningFood (another local to me business!) They offer a micro milled version of Chia Seeds and while they won’t work as well in this recipe they are a nice introduction to the product. I put them in my coffee in the morning for a little extra energy burst!
Speaking of my Locavore ways….. I haven’t talked much about our garden. This weekend I took the boys out and we bought the seeds to plant. My oldest son had a ball picking out some great additions to the garden. *Note he’s holding carrots but we put those back, they aren’t on the list this year.
I also saw on the news a seed swap in my area? Have you ever heard of these? Basically people save seeds from the harvest the year before and then swap them the following spring with other gardeners?! What a great idea, sadly as we had no garden last year we got our seeds from the hardware store instead. Maybe this is something we can shoot for next year! I can’t wait to get going on this project.
This morning workout was a quick treadmill workout 30 minutes…3 miles those 5K and 10 miles races are coming up fast!! I need the rain to go away to log some miles outside this week…that mother nature she never listens to me! And I’m hitting up a Spin Class tonight! So it’s a great day for calorie burns.
What is your go to morning breakfast? Do you have a favorite local to you food?
