Uh….. I’m in a funk. This morning has not been kind to me. I managed to spill coffee all over my white shirt on my drive into work then arrived at work to realize I left my phone at home! This has all the makings of a horrible no good day. I’m hoping things turn around lickety quick!
I may or may not have eaten a cupcake for breakfast!
First my brief weight workout.
My husband was/is a pretty serious weightlifter. He’s competed in the Empire State Games (like the Olympics for New Yorker’s) as well as had a feature in Powerlifting magazine. I would post a picture of the article, but it was years ago and the then girlfriend wrote him a love note all over it. And that would be weird right?
Needless to say when it comes to lifting weights at home in front of my husband I’m always freaked out! I’m not breathing right, I’m not in the proper position for the third squat of the 4th set, so I should do two more to make up for the bad form of one. You get the picture, it gets crazy! I know he knows his stuff and I appreciate the advice but sometimes I just want the quiet peace of doing it myself with no one watching.
Last nights workout looked like this:
-100 sit ups broken into sets of 25
-50 squats with 10 pound weights broken into 20-15-10-5
-Overhead Presses with 10 pound weights 20-15-10
– 20 Swiss-Ball L Raises
It’s a quick workout but oh man my butt/shoulders are feeling it today!
Now back to those delicious pieces of heaven! Cupcakes are just a happy food! You can’t cry and eat cupcakes although I’m sure someone somewhere has tried it. I’ve learned that if I’m going to eat less than healthy food the best thing I can do is cook it myself! At least I’m burning some calories while I stand and mix 😉
Heavenly Chocolate Cupcakes:
3/4 cup unsweetened cocoa
1 1/2 cups flour
1 1/2 cups white sugar
1 1/2 teaspoons baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 large eggs
3/4 cup water
3/4 cup buttermilk
1/3 cup vegetable oil or melted butter
1 tsp vanilla extract
In a bowl, whisk together cocoa, flour, white sugar, baking soda, baking powder and salt until thoroughly mixed.
In a small bowl, whisk together eggs, water, buttermilk, vegetable oil and vanilla extract. Whisk into flour mixture until all of the ingredients are mixed. Line Cupcake pans with liners, should make 12-24 depending on the size. Preheat oven to 350°F. Fill muffin cups evenly with the prepared batter. Bake at 350°F for 15 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Remove from the pan and let cool. Once cooled frost away!
Note: These are not at all healthy I could alter the recipe for some calories savings but I think in order to live healthy you need some indulgences once in a while. I’m not big on low cal desserts. If I’m going to splurge it needs to be full flavor!
